Congratulation Jiraporn Oneplee from Advanced Diploma of Hospitality Management (AD 10) for accepting a position at the Hilton Hotel Sydney. Jiraporn completed her industry placement at the Hilton Hotel in June 2010. She worked very hard and at the end of her placement handed her resume to the Executive chef expressing her interest. Industry Placement opened the door for Jiraporn as she is now been hired as a Commis chef at the Hilton Hotel Sydney. Well done Jiraporn, we are so proud of you!!!

AHA (NSW) Awards for Excellence Night

Hostec attended the 2010 AHA (NSW) Awards for Excellence, one of the most prestigious awards within the hospitality industry. The evening was held in the Grand ballroom at Star City Hotel & Casino and compered by the hilarious Tim "Rosso" Ross. Guests were treated to a scrumptious three course meal and the angelic voices of the Australian Girls Choir. Hostec's CEO, Ian Wilson, presented the award for Cocktail Bartender of the Year with the winner a tie between Jona Cofield (Bungalow 8 / The Loft) and Mike Enright (Ivy). Six of Hostec's International Academy students also attended the function where they had the opportunity to meet some of the industries finest as they greeted and advised guests of their table number. Hey guys!

I apologise for my absence as I have been very pre-occupied with study and work! I thought I would just drop in a blog to keep you up to date with the happenings around here!

Study is going great. This term has been much more practical and we have been keeping ourselves busy over at our training facilities at the Menzies Sydney. We use the Piano Bar for our bar service training and the Parkside Restaurant for our restaurant service training. We've been down to the stock and stores area, helping out with deliveries and stock management and have even been down to the local café to understand how businesses reconcile their daily takings. I'm really enjoying my small, yet intimate class and our mix of cultures allows us to learn language, culture and life from each other every day.

We've also been doing some 'extra practical work' by indulging in some of Sydney's best hospitality establishments! We've had the privilege of lunching at The Ivy and were even able to celebrate our class mates 21^st birthday at Aria! (Happy Birthday Gilles!) Whilst this sounds like we are making excuses to spoil ourselves, we are really experiencing great service and amazing food from a customers view – allowing us to appreciate and respect what we are actually studying! We have even met some interesting people including Franck Moreau (The worlds 4^th top sommelier!) and Peter Sullivan (Co-owner of Aria).

We really are keeping ourselves busy and thanks to Natasha Bransby, our trainer, we are understanding and appreciating hospitality in a different light!

Hostec Training Solutions have recently facilitated and customised four certified courses in partnership with CRS Australia. In June 2010, over eighty students received training in Western Sydney from a Certificate III in Business Administration to Certificate II in Hospitality. A range of sites accommodated the students to which we proudly led our hospitality students through our flagship commercial cookery kitchen at Crown Plaza Coogee Beach, Coogee. Hostec Training Solutions and CRS Australia share a common and fundamental goal to empower unemployed people by providing them skills and training required to enter the workforce with a good understanding of the work environment. Hello again!

So I'm into my third week of holidays and, my gosh, it's going so fast! I've just come back from a gorgeous long weekend away to the beautiful Hunter Valley. I stayed at the overly indulgent Crowne Plaza Resort and enjoyed a nice couple of days tasting wines, running through vineyards, eating amazing food and relaxing with spa treatments. It's gorgeous up there. I'm not much of a 'winey' but I was definitely open to trying everything, from my favourite sparkling to the unknown land of port. And I must admit, I did discover some wines that I didn't think I would enjoy but I definitely found interesting.

Last Monday night (5^th of July), a group of eight Hostec students and I trekked to the new Australian Hotels Association building to help them cater for their winter drinks function. The event featured drinks and canapés for the influential people in Sydney's hospitality accommodation industry.

The event entertained representatives from Sydney's five-star hotels including The Observatory Hotel, Hilton Sydney and Four Points by Sheraton and Sydney's biggest hospitality suppliers and sponsors including Lion Nathan, Sydney City Lexus and ofcourse Hostec! I was appointed on the front desk in the lobby to ensure people were on the list and had their name tags. Later in the night, however, I was helping the bar staff refill drinks for guests. Other students helped in the kitchen and served canapés.

It was a great night, which allowed students to volunteer and be noticed. Also, the place has amazing 180-degree views of Sydney's Circular Quay, which we enjoyed all night! I don't know how they can concentrate over there at AHA with such great views!

I'd like to take this opportunity to congratulate my good friend Tim Gatt on his new job at Tetsuya's Restaurant! For a second-year apprentice he's full of passion, enthusiasm and innovation and I know from here on he will only go up.

Good Food and Wine Show - July

This year celebrity chefs Matt Moran and Pete Evans will be attending. A range of courses will also be offerred in cluding a Barista (Coffee Making) skills course. If you miss out on the course offerred at the show, be sure to enrol at Hostec's Coffee Culture course, which teaches everything from selecting the right beans and roast to making coffee art.

Three hundred episodes of Iron Chef were filmed between 1993 and 1999, when the show ended, but repeats continue to be screened every Saturday night in Australia on SBS. The show was also a cult hit in the US and its popularity led to a spin-off version there in 2004. Chen Kenichi, the master of the spicy Chinese cuisine, has fought 97 "battles" on the show and has won about 75 per cent of them. Hostec Student Life!

Everything's going great here. During the first term I was still finding my feet and getting used to the different styles of lecturing, the diversity of students and the level of study. Now I'm feeling right at home. It's a bit crazy at the moment but organisation is the key. We've got three assignments from each subject which is a decent effort of study a week. Then I have three or so shifts a week at work and trying to catch up with mates, see the family, eat, drink, sleep and hopefully give myself a little time to relax! It doesn't sound like much but there never seems to be enough time in a day to do all you need! I live out west so unfortunately I have over an hour train ride to and from the city for each day for college and this cold weather makes it very tempting to stay in bed! However, the train does give me time to read over my notes and listen to music or even catch up on sleep! Yes, sadly I am a part of the commuting cult that falls asleep during the journey, occasionally finding a comfy spot on the shoulder of the person next to me. As eventful and unpredictable as my days are, there is no other way I would rather spend my time learning and working. Working at Crowne Plaza is great as well. It's such a fun place to start and learn in plus, working within an entertaining team of people makes every shift enjoyable. I stress and I do struggle with managing everything but we all do because that's how we learn… and really that is the life of a student in Sydney! Stress. Struggle. Accomplishment. Growth. Danielle. Hostec participates in Australia's Biggest Morning Tea

This year Hostec has decided to participate in Australia's Biggest Morning Tea. The event is one of Cancer Council's leading fundraising events and the largest, most successful of its' kind with over $70 million being raised since it first began in 1994. Playing a vital role in raising money towards Cancer Council's work in research, education, prevention and support, Hostec thought it would be a great way to give back and help raise funds for a great cause. Last year the event itself raised a HUGE $10.6 million. That's crazy! Cancer is a leading cause of death in Australia – more than 43,000 people are expected to die from cancer in 2010.

1 in 2 men and 1 in 3 women will be diagnosed with cancer before the age of 85.

An estimated 114,000 new cases of cancer will be diagnosed in Australia in 2010.

More than 60% of cancer patients will survive more than five years after diagnosis.

The survival rate for many common cancers has increased by more than 30 per cent in the past two decades.

Hostec supports the Mother's Day Classic to help raise funds for breast cancer

On Sunday 9th May, the Mother's Day Classic was held across Australia to raise funds for breast cancer. This year was the events biggest yet with over 100 000 participants raising $5.7 million for the cause. Decked out in pink there was the 4Km walk or run and the 8Km walk or run. This event brings people together to remember those who lost their fight with breast cancer, and to support those currently in their battle with their disease. Attracting thousands who also want to participate in a great event for health and fitness, it is a special morning with many donning tribute cards dedicated to their loved ones. Held in the Sydney Domain, 12 000 participants were there including one of our Hostec members who ran in the 8Km event. Organised by Women in Super, they are a group that provide educational and networking opportunities in the superannuation and finance industries. The group created the event to raise awareness and funds for breast cancer research. Supported by the National Breast Cancer Foundationthere are lots of other events coming up in the future if you are interested to get involved. Congratulations to all that completed the event and raised funds for breast cancer. And a big thanks must go to the Hostec team who came to cheer from the sidelines. With live music, food and drink stalls, the event was a bundle of fun, perfect for mother's to share with their kids and to experience how great Sydney can be when the community comes together to support a great cause. Mother's Day with a touch of Pink Salt

Well this year I chose Double Bay's stylish lounge bar and restaurant Pink Salt. Having been there once before years ago, I eagerly anticipated my return thinking it would be hard to meet the high standard I had in memory. Pink Salt shot to fame in 2006 during the televised series My Restaurant Rules in Manly. After the shows finale, they relaunched the restaurant in Sydney's cosmopolitan area which 4 years later has proved a great success. With various awards now under their belt, the Pink Salt team of Evan Hansimikali and Bella Serventi have created a beautiful restaurant. Decked out in pink and white colours, with staff dressed to suit, I nor Mum, were not disappointed with my choice of venue for our Mother's Day. Presented with a small gift for all mothers, the mood was instantly relaxing and service friendly. There was a set Mother's Day menu which included salt & pepper squid with honey,soy & coriander dipping sauce, grain fed Beef fillet with confit field mushroom, creamy potato mash, onion jam & red wine jus and of course a surprise lemon and vanilla tart-let for dessert. I must admit every course was cooked perfectly and before I had left I was planning my next birthday at the venue. So would I recommend Pink Salt? Absolutely. Located at 53 Cross St, Double Bay, it's the ideal location for any occasion. Couples, families, close friends, the pink setting accompanied by chilled tunes really does make you feel like you've escaped. It is a bit pricey so I wouldn't be popping there every weekend, but if you are interested to have a Pink Salt experience, click the link above for their contact number and reservations.

O negative blood is universal- That means it can be given to anyone. Did you know... Australia has one of the safest blood supplies in the world. To be able to donate please look at the below criteria….

be feeling well
weigh at least 45kg (50kg if between 16-18 years old)

The 2010 AHA Awards Night!

On Monday 4th May, I along with a fellow student Anthony represented Hostec at the 13th Annual NSW Australian Hotels Association Awards. Hosted by the amazingly unique Hilton Sydney, the night was eagerly anticipated by all. Over 500 guests attended, so frocked up in our classy outfits, we had the role to assist guests in seating or any other enquiries.

We met and were introduced to many interesting people who are highly recognised within the Hospitality Accommodation industry, including general managers and the elite of all departments from many of NSW most recognised hotels. I thought it was a great opportunity to network with potential employers!

Hosted by the hilarious Mikey Robbins, the night was one of a kind. My most memorable awards included: Bar of the Year - Blue Bar, Shangri-La Hotel Sydney Deluxe Hotel Accommodation of the Year - The Observatory Hotel

The Shangri-La Sydney and the Wolgan Valley Resort and Spa were constant winners of the night.

Unfortunately, we weren't guests for the dinner and missed out on the delectable meals. However, once the presentation was over we were off duty and able to relax. The evening ended as we enjoyed classy cocktails and mingled with Hostec's corporate.

As a student, the Hilton Sydney presented a thoroughly organised and highly professional front, a level that I constantly study and work towards. This event was a great opportunity to mingle with and recognise NSW hospitality professionals. An opportunity only available due to Hostec's strong value and reputation within the Industry!

There's no time to rest for Hostec as the triathlon training comes to an end, another 10 Hostec members have signed up for boot camp. Inner West Boxing and Personal Training has our team training again to compete for the title of ''The Fittest Crew in Sydney.' While we won the title back in December, our attempt to get it in the next challenge didn't go so well last month. So with new participants Hostec is set to rival other hospitality firms to prove it was no fluke and regain the title. Training includes a mixture of circuit, boxing and long runs, trainer Nick Woodall is sure to keep all on their toes in the 8-10 week boot camp sessions.

Hostec goes for gold in the Nissan/BRW Triathlon

On Sunday 18th April, 12 of our fit Hostec team members banded together in teams to compete in the Sydney Nissan/BRW Corporate Triathlon. Located at Mrs Macquaries Point, Hosteccompeted in a 400m swim, 10Km bike ride and 4Km run against over 4 000 others. With the sun shining bright in the early morning there was no shortage of excitement from all who were competing, and fellow Hostec team members also arrived to show their support. In its' 23rd year the event is aimed to bring together team work, company pride while encouraging all to engage in a healthy lifestyle. Everyday is different here. Because Hostec is situated in Sydney CBD just above Wynyard station, the hussle and bussle gets you going every morning. The style of study here is laidback yet thorough. My lecturer is animated and full of knowledge. The academy is relatively small compared to universities, however to me that is the greatest advantage us students have. It means we are focused more upon and our different needs are catered to as much as Hostec can. Being in the heart of Sydney, we are able to easily access relevant areas of study or investigate assessments relating to restaurants or hotels simply as we are surrounded by hospitality of all levels. Hostec is more diverse than you can imagine, but I love having friends who can introduce you to a different way of life. I have come to know an awesome Chinese student, Yuan. She prefers to be called Jeanette as it makes her feel Aussie! Truly but, I love learning about the differences in China to Australia and have grown to understand the culture and people a great more. She's even taught me a few handy Chinese words! As of next week I join a new class and look forward to getting to know another great bunch of people from amazing parts of world. Hostec students become part of a Live Student Audience at Ready Steady Cook Season 6!!

Hostec Students had a great afternoon at Channel 10 Studios in Pyrmont yesterday while being part of a live studio audience for Ready Steady Cook. The chefs, Dominique and Matt, had 20 minutes to create 4 dishes using the ingredients that 2 selected people from the audience brought with them. Dominique got creative with lamb steaks, mangoes, and assorted mushrooms, while Matt had to cook with chicken thighs, pears, and goat's cheese. The special ingredient for the Feast in a Flash meal was Tuna. The chefs had 10 minutes to create a special dish. My First Week at Hostec

And I study in a business school called Ecole Atlantique de Commerce (Audencia Group) in Nantes. Last year, I decided to spend a year in Australia between my second and third year. I had the idea for a long time because I always loved travelling and discovering new cultures. I chose Australia, as it's an English speaking country - so after one year I hope to become fluent in this language. Secondly, I have had a lot of good feedback from people who had already been to Australia. So far I totally agree with them! Australia is such a good country to live; people are so nice and friendly, landscapes are amazing and there is a good weather all the time. I especially love Sydney. You have all the great things a big city can provide alongside beautiful beaches. I've been in Australia for 7 month now, and the time flies past so quickly, I have enjoyed every moment. When I first arrived I was a little bit lost, a new country, a big town, a new language and jet lag. I directly studied in an international school. It was great because this month served as a great reminder of some Basic English skills, but most importantly I made a lot of friends from all over the world! Now I am an intern in Hostec for the next 20 weeks in the Talent Solutions department. It's a good experience to discover Australian business, particularly the recruitment business. The office is young and people are very friendly. So I think it's going to be a great internship. So if you want a great life's experience, come to Australia! Hostec gives Subsolu the tapas tick

Resident reviewer back, last night I tried my hand at a taste of tapas in the heart of Sydney's CBD. Subsolo, a Spanish restaurant and bar recommended to me by a former Hostec employee, was the perfect blend of Barcelona tapas and modern cuisine. The underground space had stunning red lighting, providing an intimate feel accompanied by friendly service. Starting with black olive sour dough bread, some traditional Spanish jamon and tortilla de la casa, I was guilty of eating too much too quickly. The food was fresh and exactly what you imagine when going for a touch of tapas. To follow came crumbed meatballs with melting manchego cheese centres in Romesco sauce, which I'm sad to say were a tad dry for my liking. The final plate; Paprika salt and pepper squid with saffron mayonnaise which were my favourite and a perfect way to finish the meal. Subsolo provided a great dining experience. The atmosphere was relaxed, food delicious and well priced and I left feeling more than satisfied with the hospitality they offered and will certainly be returning again. There's never a time when a dazzling cocktail isn't appreciated. My favourite cocktail at the moment is the classic Japanese Slipper. Low in alcohol but intensely fruity. It's simple:

30 mLs Midori Melon Liquor 30 mLs Cointreau 30 mLs lemon juice

Ingredients are mixed with a scoop of ice in a cocktail shaker, and then strained into a cocktail glass. A cherry is dropped into the bottom of the glass for a fresh snap.

It's short and sweet - Everything a cocktail should be to wind you down from a big day.

Most commonly recognised in Ireland, it has become a secular of the Irish culture. Yesterday marked the beginning of Sydney Morning Herald's NSW Wine Week with Sydney's biggest wine festival, Sydney Cellar Door. Showcasing over 100 premium NSW wine regions, this fantastic free event was not to be missed and was the perfect way to compare various wines in the different regions. With live entertainment and gourmet food stalls from various Sydney restaurants, the beautiful weather made this event the perfect experience for anyone with a taste for wine. Even if you weren't drinking you could still enjoy the atmosphere and delicious variety of food including gelato and gluten-free marshmellows (my favourite) to Thai cuisine. Hostec staff Remi Descamps & Sam Cordoba attened the spectacular opening night of Taste of Sydney. Food aficionados sampled the amazing fare from some of Sydney's top restaurants as well as some of the country's best food and drink producers. It was standing room only in the Australian Gourmet Traveller Taste Kitchen as visitors watched the entertaining and talented trio of Matt Kemp, Warren Turnbull & Colin Fassnidge open the night. Alex Herbert and George Francisco also displayed their culinary prowess in the packed out feature. Visitors in the Gourmet Traveller wine theatre tasted some of the finest wine and champagne in the country with tasting sessions lead by wine writer Nick Stock. Student Tips for keeping your energy up!

Falling asleep in class? Finding it hard to juggle those late nights and early mornings between work and college? As a student I know that my eating patterns have become crazy and generally student's first instinct is to skip meals and grab a snack in a weak attempt to save time. Really all we are doing is cutting ourselves off from vital fuel which we need to give us energy throughout the day.

My mum always told me 'Breakfast is the most important meal of the day!' Even though i rolled my eyes and ate it to keep her happy, I was never tired during the day and only lost concentration by chatting to my friends. I did a little bit of research using faq.org and discovered mum was right! – Eating your breakfast helps maintain concentration and increases likelihood of consuming calcium, folic acid and vitamin C which can be found in yogurts and fresh fruits and vegetables.

Other tips to keeping up your energy levels include; 1. Getting at least 8 hours of sleep a night will minimise your lack of concentration or tiredness 2. Drinking lots of water and eating fruit throughout the day increases your consumption of important fibre, vitamins and minerals. 3. Exercising regularly helps manage stress and promotes mental and physical stamina. Even going for a walk whilst reading your study notes will allow you to relax and absorb more information

Healthy snacks for you to nibble during study or on your way home can be; - Crackers - Canned fruit - Fresh fruit - Cereal - Nuts, Dried fruit and Sultanas - Pita bread - Soup - Popcorn (single serving bags) - Tuna fish - Cheese - Yogurt/Smoothies - Grain bread We all love to eat - I know that I sure do! Whilst it's hard to sometimes make time for a full meal it's important that we keep ourselves balanced. I guess at the end of the day you are what you eat. Put more in and you get more out! Adam Melonas - Head of Creation

Currently Head Creative Chef at the 2 Michelin Star La Terraza Del Casino, Adam held his first Head Chef position at London fine dining restaurant "Otto's" at the age of 19. Adam has also held various positions at Sunbar Restaurant and Lounge (Brisbane, Australia), Shangri-La Hotel Dubai (UAE), Shangri-La Hotel Pudong (China) and the Burj al Arab in Dubai (UAE). Melonas is the lone Australian representative in a team working in an experimental food lab, charged with sourcing new products and techniques from around the world as well as cooking as part of El Bulli catering. Melonas works under Paco Roncero, currently considered one of Spain's top chefs and admits that it is his "dream job". Developing and exchanging ideas is very important to him and so he spends 2 weeks a season at the world famous El Bulli to exchange new ideas and techniques. Having lived, worked and travelled extensively to 5 of the world's 6 habitable continents, this exposure has given Adam a depth of knowledge in terms of both ingredients and cooking styles that is unmatched for a person his age. AIME has become a must-attend event on the meetings and incentives industry calendar and this year's record attendance over the 2nd and 3rd of March was great to see. There, apart of the record numbers, were Hostec staff members Kerry Healy and Alistair Shackman. Kerry and Alistair throughly enjoyed their time attending AIME and networking with great contacts whilst in Melbourne. AIME 2010 showcased over 800 exhibitors, 195 new companies including Lufthansa German Airlines, Delta Airlines, Visit London and Leading Hotels of the World. This year it is estimated that AIME has attracted $400million in business travel expenditure booked by attendees! With AIME's growing popularity and excellent networking opportunities we will be sure to attend again next year and hope to see you there!

Hostec tries a touch of Spanish at Velero

With summer sadly coming to an end over the weekend, I thought I should tackle the task of having one last dinner in one of Sydney's hot spots (tough life!). As the late sunsets will become fewer and fewer, I got myself down to Woolloomooloo with my lovely family on Friday night for a taste of Spanish tapas at Velero. The evening started well with a taste of bubbles and fresh cured meats, but with every expectation to experience provincial Spain the excitement of the meal stopped there. Velero proved to have a great menu with an extensive list of tapas, market fresh fish, grilled meats matched with imported Spanish wines. However the meals did not meet my Hostec taste buds quite how I had hoped. I ordered the beautiful Riverina fillet from the grill (pictured) and while it looked delicious it was indeed overcooked. Family members opted for the more traditional Spanish paella (also pictured) and while one said the mix of prawns, mushrooms, clams and chili was the perfect blend with our selection of wines, another believed it was dry. On the plus side the atmosphere was relaxed and peaceful, warm and friendly hospitality was ensured with our dining experience being thoroughly enjoyable. A mixture of Spanish cheeses, cinnamon and hazelnut sorbet saw the end of the night with small portions but were complemented by red and white wines. For my final summer night Velero did get the Hostec tick of approval. I saw the sun set over the wharf, the waiters catered to our needs, and while the food fell a little flat, there was a great vibe in the area that people of all ages can appreciate. On Saturday 27th February, a couple Hostec members thought they'd test their skills at SLAM Volleyball on Manly Beach. Celebrating their 10th anniversary this year, the summer beach festival proved a must do. With teams dressed in fancy dress accompanied by musical mayhem, we gathered at Sydney's Manly to check out the atmosphere and test our luck at a few games of volleyball. With a theme of op shop, there was everything from The Flinstones, army boys, mad hatters and the brightest and smallest bikinis. While our Hostec members team didn't win quite as many rounds as hoped (nothing to do with a huge lack of practice), the day was thoroughly enjoyed while listening to the mix of DJs, seeing the costumes, and spending the day in sun. "Originally from New Zealand; like so many other Kiwis, I have now been living in Australia for the past ten years. My passion and drive for the hospitality industry began for me when I started working part time in a selection of bars and pubs in New Zealand. In 2001 I moved to Australia to live in Tasmania, Hobart. This is where I began working in Mures Restaurant located on the famous Hobart Waterfront on the upper deck restaurant and also the lower deck bistro aiming for and securing a supervisory role. Since moving to Sydney, I have brought with me my knowledge and drive for the hospitality industry and continued my connection with the industry as a Business Development Manager for Hostec. In my role, I focus on forming relationships with clients and finding the correct solution to the needs of their business. With our vast scope of courses, we can tailor and construct a program ranging from one day to six weeks ultimately upskilling and training both domestic and international students. On Thursday afternoon, the Hostec crew sauntered over to The Office Hotel on Kent Street where we had a nice birthday lunch for Niz. The menu had classic favourites, and I had my usual the steak sandwich and chips. That evening, the celebration continued with drinks at Establishment Bar. It worked out perfectly because it was ladies night, which entitled women to two free glasses of champagne. We exchanged jovial conversation over drinks. The ambiance was very sophisticated with the cool sounds of light jazz and house music. People were dressed from all walks to corporate to nightlife glamour. It was such a great day to celebrate with the Hostec crew. The celebration continues. That Saturday, a few of us went out for Jemma's birthday. We had a pre clubbing dinner at the Ivy Bar and made our way over to Club Retro. The floors had different themes ranging from 80s to 90s music. My favourite was the 80s floor, as most songs in this decade were great. We danced the night away and that was the end to such a festive week. Yours truly, Yewande

Spills and Thrills of Hospitality

My parents recently went to a beautiful wedding at a well known 4 and a half star hotel, which for their own dignity shall remain nameless. The evening and location was amazing however there was one slight problem… My parents table [of 10!] somehow was completely overlooked and the whole table missed out on their main meal! Crazy and almost incomprehendable how a hotel, which would have catered for many more weddings before this, lost organisation and missed a whole tables main meal! According to mum and dad however, the hotels compensation and impeccable service to quickly make amends for their mistake saved the day.

Whilst we shake our head, it does make you smile when you consider the unavoidable hiccups customers and guests encounter when dining at a restaurant or even staying at a hotel. Considering my experience within hospitality hasn't been long, mistakes and embarrassment [to me and the guest!] is bound to happen. My first shock mistake was offcourse, spilling a beer down a guest back. I think I kept my sanity as he was not as upset as I expected. To point out my abilities as an amateur a guest even commented saying 'Is she new? Yeah you can tell.' Even further I've dropped glasses, walked in on 'busy' couples and even offered dessert to guests who had just finished their entrées! My work colleagues and even family and friends have filled me in on many colourful stories during their time at work or out socialising. I've heard stories of seeing apprentice chefs run off to hospital during service, attendants embarrassingly walking in on guests in compromising positions and even guests throwing meals on the ground if not serviced efficiently. They've had guests steal from the bar, been served alcohol when they've been designated driver, experienced very messy wedding parties, had red wine spilled all over their table and even encountered rooms as messy as a tip! And I doubt that's even the beginning!

Weather your front or back of house or on the receiving side of hospitality there is always chance that our service will run into a bump in the road. I have no doubt that even you reading this blog have smiled and remembered a moment at work or socialising somewhere where things just don't go to plan.

We're all human, mistakes happen.

When you go to the Sydney Opera House for a drink, the most obvious place it seems is to go to Opera Bar... Well last night I had a change of tune and decided to pop into one of the more unknown bars; Studio Cafe. Pleasantly surprised, located on the ground floor outside the Drama Theatre, we were seated immediately, the service was prompt and friendly. While I admit it was a quiet Tuesday night, it proved to be the more civilised venue of the selection of bars at one of Sydney's most famous icons. With a bit of research into the venue, I've discovered Studio Cafe has some very good specials. As you gaze out at the stunning Harbour Bridge (view pictured), you can get a main meal + wine for a reasonable $25, or for just $40 you can also get dessert and coffee (I believe you need to show your tickets to your intended theatre experience). As a true SydneysiderI admit I'm a little bias in saying that it's hard to beat having a drink anywhere at the Opera House with the amazing view, but Studio Cafe was the answer to a quick and quiet meal before my theatre experience. A great selection of wines with accompanying bistro menu, I'm sure the Hostec crew will be dining there shorty.

My first week at Hostec!

Honestly, I had no idea what to expect from my first week at Hostec. I knew I'd be thrown into a crazy and completely different routine but I was too excited to even think about it. I was shocked to see a student leave class without permission or not address the teacher with an 'excuse me Mrs?' but as the day continued I slowly took grasp of the fact that we are all adults and treated accordingly. My lecturer Petronella made me feel welcome and comfortable within our class and brought a fresh humour and warm personality to liven up class. As Hostec is both a college for International and Domestic student, it turns out that I happened to be the only 'Australian' student in my class. To be honest but, I love it. I love the mix of languages and cultures other students bring and look forward to learning more about them and their diverse cultures. Having lunch in the Wynyard Park gives me a chance to relax and revitalize for afternoon class. I love sitting and watching the hussle and bustle of Sydney streets and the large array of people the city attracts! Overall my favourite part of college is that it's in Sydney; completely and easily accessible from anywhere and close to anything important and entertaining! Tomorrow we have class in The Menzies hotel, a grand hotel of Sydney and I can't wait to be studying in somewhere different and amazing like The Menzies. Day in Sydney City

I have not explored Sydney much but this Saturday, I decided to be a little more adventurous and see what the city has to offer. A few co-workers and I headed to the city to catch up over food and beverage. Amanda, a former intern for Hostec, also from the United States suggested we go to the Bavarian Bier Café for a Saturday afternoon lunch.

The ambiance of the restaurant was wood deco and unlike most restaurants had long wooden tables with up to forty guests at one table. I was confused as to where we would sit but then I looked up and saw some booths. We sat there and I peeked through the menu. There were so many specialties straight from Bavaria, but I was not so daring and just took the lunch special which was a "Poached Chicken Breast" with a side of chips. It was delicious and had a colourful platter surrounded with so many vegetables (tomatoes, celery, and even vegetables I did not know the name of.) After our lunch, two other co-workers came down to join us. One happened to be another Amanda and the other was Nick. Unfortunately, Nick could not stay too long and left after one drink. After our stint at Bavarian, I felt like having chocolate. Both Amandas suggested we go to Max Brenner, a popular chocolate bar in Sydney. I know that there is one in SoHo too, but I never really thought about going there. When we went in it was a chocolate paradise, there was chocolate in tubs, and just chocolate everywhere. I wanted everything on the menu, but just settled for a chocolate soufflé with ice cream on the side. It was filled with rich chocolate goodness inside, and I enjoyed it so much. After, our day ended early because of the heavy rain outside. I felt like I was in London instead of the Sydney. It was quite an enjoyable day and I am looking forward to frequenting Max Brenner when I return to New York.

Fresh from sharing the hotplates with Michel Roux, the Hostec Academy Patisserie students this week broke bread with the world's favourite food crusader, Jamie Oliver!! Although it's not widely known what Jamie was doing on our shores (that's the secret), our Students had the pleasure of catching some of his filming at Brassier Bread. Based in Banksmeadow, Brassier Bread has long been supplying artesian bread to the Sydney's leading restaurants, cafes and deli's. They also lead the charge on sharing the tradition of bread baking through their many hands on classes. Brassier Bread is home to a number of Hostec Academy Patisserie students on their work placement. Our Academy students sure are meeting cookery royalty these days!!

Kangatarians

There's a new semi-vegetarian wave emerging in Australia: people who exclude all meat except kangaroo on environmental, ecological and humanitarian grounds. They call themselves kangatarians and are slowly growing in numbers. The low level of greenhouse gas emissions produced by kangaroos, and the fact they require no additional feed, water or land cleared for them, make them an obvious choice for the ecologically conscious. A lecturer in natural resource management at the University of Sydney, Peter Ampt, believes many environmentally aware Australians are turning to kangaroo meat because they see it, essentially, as living a natural life. Ampt says it is the ultimate in free-range, organic meat. Kangaroo is often described as the animal of choice for those who exclusively eat organic meat. The industry has struggled with misconceptions about the meat since 1993, when it became legal to sell for human consumption in NSW. There is still a belief kangaroo is farmed, for example, which is not true. There is no shortage of cut choices with strip loin, rump, diced kangaroo, tail, shanks, racks, mince and sausages. The kanga banga, or kangaroo sausage, is becoming a favourite on barbecues according to the owner of Sam the Butcher, Sam Diasino. Diasino sold out of his signature sausages - spiced with cinnamon, cardamom, cloves and tomatoes - in the lead-up to Australia Day. Here's a great Australian Kangatarian Friendly Recipe KANGAROO FILLET WITH MACADAMIAS INGREDIENTS 1Tbs macadamia oil 1/2 Cup raw or roasted macadamias 600g Thick loin fillets of kangaroo(can substitute beef or venison) Freshly ground black pepper to taste 1/2 Cup good red wine or 50/50 red and a good port 1 Fresh or tinned pear, peeled and sliced 1/4 Cup pear juice 2 Tbs red currant or cranberry jelly 2 Tbs Fresh or tinned mixed berries METHOD 1. Heat macadamia oil in a large heavy-based pan. If using raw macadamias, add them to the pan and cook over a low heat until golden brown. 2. Remove and drain on kitchen paper. 3. Season kangaroo with cracked black pepper, add to the hot oil and cook for 2 - 3 minutes on each side or until cooked as desired (medium rare is the most tender). 4. Remove from the pan, cover with foil and keep warm. 5. Deglaze pan with red wine and pear juice, add pears and jelly and cook for 2 - 3 minutes or until sauce is glaze consistency. 6. Add mixed berries and toss gently. 7. Return kangaroo and macadamias to pan, turning to coat with glaze. Serve with the glaze spooned over and around the plate.

The event was held to help job seekers find out about training opportunities and other ways in which would help them secure work. Hostec supports International Childhood Cancer Day

Yesterday Monday 15th February; Hostec, combined with many other organisations to show our support for International Childhood Cancer Day. Also known as Ring a Bell for Ben, cathedral bells across the country were ringing to raise awareness about childhood cancer research and honour the life of Ben Clarke who lost his young fight with cancer in 2008.Approximately five of our Hostec team members were up early on the rainy morning selling golden ribbons for the occasion at Wynyard train station. With the head organiser of the event being the International Confederation of Childhood Cancer Parent Organisations (ICCCPO), St Andrews Cathedral in Sydney rang their bells with a large gathering of people there to mark the occasion. In association with Cure Our Kids whom we've shown our support to in the past, a big congratulations must go to the team there for organising volunteers. Hi Everyone, My name is Yewande! I am from Queens, New York but go to Vanderbilt University in Nashville, TN. I am studying in Australia for the next four months for a school internship program. I am excited to be in Sydney, because it reminds me of my hometown New York City. There are so many different types of people, foods, and it's just a dynamic place. I am doing an internship here at Hostec. It is above the Wynyard train station and the office is young and funky with bright green tones and glass doors. I am a marketing intern in the office and I am enjoying learning about Australia, its educational system, and meeting new people. I am so excited to explore this place. There are so many great beaches, restaurants, museums, and all the great things a big city should have. I will update my adventures through this blog so you can see how the day in the life of a student/intern in Sydney can be. I must admit to you, I was scared to move to a new city at the other side of the world by myself. But I am so happy, I did because I am growing so much as a person and learning so much about what I want to do with my life. Hi Everyone!

My name is Danielle Raunjak. I was lucky enough to successfully win the 2010 Advanced Diploma of Hospitality Scholarship at Hostec International Academy! I have just completed my Year 12 studies at Bede Polding College in Windsor and look forward to a full packed adventurous year! I have recently become and food and beverage attendant at Crowne Plaza Norwest where I am learning everyday about myself and the best service I can give. Inserted is a photo of me working New Years Eve at Crowne Plaza! I enjoy work so much I find it hard to call it work! In my spare time I believe there is nothing better to do than eat delicious food and socialize with my unforgettable family and friends. I live about an hour west out of the city, so the hour and a half train ride may be exhausting but is well worth the culture and hussle and bussle of Sydney. I love China Town and Paddy's Markets and couldn't think of a better meeting spot than a good Yum Cha restaurant! My Dad was born in Austria whilst Mum was born in Fiji with Chinese, Samoan and Tongan running through her. I think the different cultures and traditions I have grown up around have allowed me to love Australia for its diversity and also made me grateful for what this amazing country has to offer.

I discovered Hostec through the annual Careers Expo held for Year 10 and 12 students at the Kingswood campus for UWS. This careers market changed my direction of schooling dramatically as I soaked up all information I could on colleges and courses for hospitality. I truly think that exposing yourself to resources such as careers expeditions and any information careers advisors give is the best advantage you can get in finding out what's right for you. Hospitality has unconsciously been a way of life to me. I have grown up around great food, experienced many holidays from travelling to Fiji to camping down at the local river and always felt a reward in making people happy.

I can't tell you what this year will hold for me, but I know it will go fast. I'm excited to meet both the international and domestic students I will be studying with and cant wait to develop myself and work within some of Sydney's greatest hotels. I will update my blog regularly to keep you posted on the fun times and quirky tales of my life as a student. Becoming apart of Hostec I believe I am one step closer to where I want to be and I know that the teachers, resources and contacts Hostec has will enable me to grow as a person and within hospitality. I cant wait!

Located in the heart of Melbourne on Collins St, I was recently lucky enough to be treated to a couple of nights at the Sofitel. Visiting the beautiful city for the Australian Open (go Federer!), we thought it was best to do it in style. Just a 15 minute walk away from the courts, it truly felt like an escape from everyday hassles in Sydney. Just walking outside you are greeted to retail heaven, walking to the inner city for shopping to meet everyone's shopping limits. It's also a short walk away from the Melbourne Cricket Ground, Arts Centre, the Aquarium and Federation Square. Walking into my room I was delighted to see a fantastic view of the city. 47 levels up, it's not the place to stay if you have a fear of heights as you gaze out to the flat city which just provides you with a bundle of ideas of what to get up to while on your stay in Melbourne. Starring out onto Rod Laver Arena I became more and more excited for my Federer semi final I'd witness, I would definitely recommend the Sofitel Melbourne for a stay in your travels to Victoria if you're after a taste of luxury.

Hostec Training recently partnered with Australian Catholic University in facilitating and delivering a hospitality program for a selection of international students. Australian Catholic University National, work with international students on exchange and intern programs to study and work in Australia relative to the degree of study overseas.

Hostec training provided a program encompassing the vital skills required for the hospitality industry for students wishing to up skill, qualify and improve their study of English language at Australian Catholic University situated at North Sydney. On completion of the hospitality course, the Hostec team were delighted to present the twelve students involved in the program, their certificates of completion presented by Michelle Willoughby, ACU's International Programs Manager and Ian Wilson , CEO of Hostec. On Sunday 7th February 2010, a record 4500 entrants competed in the 27th Sydney Morning Herald Cole Classic. As the rain came down and the strong swells shifted, two of our brave Hostec team members got amongst the action in the water. With 1Km and 2Km distances from Manly to Shelley Beach, all entrants received a medal which were worn with pride. This year was the first where the event was teamed with charity experts Everyday Hero and over $300 000 was raised. Famed chef Ferran Adria, often referred to as the dean of molecular gastronomy, announced the closure on Tuesday. The restaurant traditionally closes from mid-December to mid-June so he and his staff can develop new dishes and techniques. "With a format like the current one it is impossible to keep creating," Mr. Adrià, 47, told reporters at the gastronomic fair Madrid Fusion. Adria's kitchen laboratory is famous for creations like liquid ravioli; caviar made from olive oil; an elliptical olive that is pure liquid; pine cone mousse; ravioli of cuttlefish wrapped around coconut milk; and Parmesan snow. They are astonishing and often baffling technical accomplishments that have garnered many disciples and set trends in restaurant kitchens worldwide. The 2012-13 stretch "will be devoted to think, plan and prepare the new format for subsequent years," the restaurant said in a statement. "During this time, all the know-how about elaborations, techniques and styles acquired after 30 years of creative research will be analyzed, and the results of said work will be compiled" in a comprehensive encyclopedia. El Bulli is not closing down - it will be back in 2014 and when it re-opens it will be different.

Earlier this month Four Seasons opened their Beirut property to welcome guests in Lebanon's capital for very first time. I'm a huge fan of Sydney's Four Seasons Hotel, I love everything about them.
